So now, we are adding five more meals and amping up the menu, music, and experience - unleashing the culinary talents of Chef Jasper Alivia. 

 

DINNER WITH A SOUNDTRACK: CAN YOU DIG IT?

Archaeological projects in the Bindy Bazaar determined several areas where vendors sold crafts and wares during the Woodstock festival. Presently, we are working to definitively map these sites, which in turn will help us verify trails within the woods. In the spirit of discovery, join us for a culinary experience featuring ingredients dug from the ground: root vegetables!

First:

Carrots

Ember Fired, Pickled, Harrisa Spiced Dukkah

 

Second (Choice Of): 

Chorizo
Turnip, Kale, Saffron Brodo

Roasted Beets
Walnut Pesto, Smoked Goat Cheese, Pickled Okra

 

Third (Choice Of):

Pork Loin

Jerusalem Artichokes, Chanterelles, Sour Cherry Jus

Seared Scallops
Parsnip Puree, Braised Cabbage, Scallion Pistou

 

Fourth:

Peanut Butter Sabayon
Dark Chocolate, Spiced Popcorn

About Chef Jasper

Born in the Philippines and raised in American Samoa, Jasper Alivia did not initially plan for his life to be so intertwined with food and restaurants. He moved to Philadelphia to attend Saint Joseph’s University where he received his B.A. in Economics. Quickly he realized that cooking was his calling and soon left a promising job in finance to work in restaurants in Philadelphia. He later moved to New York City to attend the French Culinary Institute, and put in work and training at some of the highest rated restaurants in town, including Savoy and Park Avalon.

Now calling the Catskills home, his hope as the Executive Chef of Bethel Woods Center for the Arts is to provide high-quality food to complement the Center’s variety of programs, and to source ingredients locally, highlighting regional cuisine with global influences.
